Healthy Spring Rolls

Spring rolls are such a light, healthy and fresh lunch or dinner. I used to be daunted at the thought of making them, thinking they would be too time-consuming and fiddly. They’re actually quite simple and don’t require much effort. I absolutely love eating them, so that’s strong motivation to take the time to make them, too! This recipe makes four serves so I love to make them up at dinner time and have the leftovers for lunch the next day.

I’ve realised after doing a lot of travelling overseas that we’re quite lucky to have so many healthy options for eating out in Perth. It is rare to find a cafe that doesn’t have any fresh juices, smoothies and a few raw treats available, therefore, I had to be quite ruthless with this list. It contains only the cafes that I think strive to offer the majority of items on their menu as ‘healthy’, rather than just having a small selection.

Unfortunately, one of the food aversions I have developed since being pregnant is salads. I really don’t find them appealing at the moment! So, I have been trying to find ways to make salad more exciting so I can get some antioxidant and vitamin rich vegetables into me (and my baby)! I am a huge chocolate lover so jumped at the chance to do a chocolate farm tour when holidaying on the Hawaiian island of Kauai. I went with the ‘Garden Island Chocolate’ company and our hosts Koa and Angela were extremely passionate and knowledgeable.

This recipe was inspired by a salad I loved to buy from my local supermarket. I was keen to try recreate it because I knew I could make it for a fraction of the price and with a healthier version of Caesar dressing, rather than theirs, which was full of weird ingredients and inflammatory canola oil. Salted Caramel Smoothie Bowl

This a delicious snack, and it’s perfect now that the weather is warming up. You can’t go wrong with the flavours in this smoothie bowl!

Serves 1

Ingredients

Smoothie bowl:
1 handful ice
1/4 cup coconut milk
1/4 cup filtered water
1 scoop/30g vanilla protein powder
1 large / 140g frozen banana, broken into chunks
2 dried dates
2 pinches Himalayan or sea salt

Toppings:
1 tsp maca
1/4 cup granola
